cream of broccoli soup

Broccoli arrived in my weekly Produce Farmers Direct box, so soup was on for dinner!   Love to make soup for dinner one night, and then have leftovers for the next night!

Cream of Broccoli Soup Recipe


  • 1/4 cup unsalted butter
  • 1 medium onion, chopped into small pieces
  • 2 stalks celery, diced into small pieces
  • 1/4 cup all purpose flour
  • 4-5 cups chicken or vegetable broth
  • 1 cup water
  • 1 pound broccoli, washed, stemmed, cut into small pieces
  • 1/4 cup half and half
  • salt and pepper to taste
  • shredded cheese and bacon bits (optional)


  1. In medium pot, melt butter over medium low heat. Add onion and celery, cook, stirring until softened, about 8-9 minutes
  2. Add flour, cook until combined, one minute
  3. Add water and 4 cups of broth. Bring to a boil and then reduce to a simmer, whisk every 1-2 minutes or the bottom will thicken and burn. Simmer 8-10 minutes.
  4. Add broccoli, continue to simmer until broccoli is very tender, about 22 minutes or so.
  5. Use an immersion blender to puree OR transfer (be careful as it's hot!) in batches to blender and puree until smooth, then return to pot.
  6. Add half and half and stir until warmed through.
  7. Season with salt and pepper.
  8. May need to add more broth if it's too thick.
