Roasting eggplant from my weekly Produce Farmers Direct box was so easy and made the entire job easier – plus it was great in the lasagna that I made for dinner!

Roasted Eggplant Recipe


  • 1-2 eggplant, washed, peeled, cut into 1/4 slices
  • 1 Tbs olive oil
  • salt and pepper


  1. Heat oven to 450
  2. Place eggplant slices on parchment covered baking sheet
  3. Drizzle with olive oil
  4. Sprinkle salt and pepper
  5. Place tray into preheated oven, bake approximately 20 minutes or until slices being to brown
  6. Remove, place in lasagna, used to make eggplant parmesan, etc
