I couldn’t think of what to make for dinner, but then with all the vegetables from my weekly Produce Farmers Direct box, vegetable lasagna came to mind!  It was so delicious!

Vegetable Lasagna Recipe


  • 1 box no boil lasagna noodles
  • roasted, cooked vegetables, to your liking, for this recipe I used: onion, mushrooms, roasted eggplant, roasted red peppers, squash, zucchini
  • approximately 6-7 cups marinara sauce
  • 1 pint sour cream
  • 1 4oz log plain goat cheese
  • 4-6 ounces queso fresco (optional)
  • 1/4 cup fresh snipped basil, chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp garlic
  • 2 fresh large mozzarella balls, thjnly sliced
  • fresh grated italian cheese


  1. Please note: You can use ANY vegetables you like in this recipe - this recipe is from what I had on hand the day I made the lasagna!
  2. Spray large baking pan with non stick cooking spray
  3. Mix sour cream, goat cheese and queso fresco together in bowl
  4. Spread 1 1/2 cups marinara sauce on the bottom of the pan
  5. Place 3-4 lasagna noodles on top
  6. Place vegetable layer on top of the noodles
  7. Place fresh basil on top
  8. Spread sour cream mixture thinly over top
  9. Place mozzarella slices on top
  10. Pour 1 1/2 cups of sauce over that layer
  11. Place 3-4 lasagna noodles on top
  12. Pour another vegetable layer on top
  13. Spread the rest of sour cream mixture on top
  14. Place mozzarella slices on top of that
  15. Pour 1 1/2 cups of sauce over that layer
  16. Sprinkle with remaining basil
  17. Place more noodles on top
  18. Pour remaining sauce on top of that
  19. Cover tightly with foil and refrigerate over night.
  20. Preheat oven to 375.
  21. Bake, covered for about 1 hour 20 minutes or until noodles are soft and cooked
  22. Remove foil, place grated cheese on top
  23. Bake an additional 15 minutes
  24. Remove from oven
  25. Rest for 10 minutes before cutting
