I love the bite and crunch of a fresh pickle – and when mini pickling cucumbers show up in my weekly Produce Farmers Direct box, I always know right away what I’m going to make with them!


Refrigerator Pickle Recipe


  • 2-3 pounds pickling cucumbers
  • 4 cups water
  • 3 cups distilled white vinegar
  • 1 cup red wine vinegar
  • 1 cup sugar
  • 1/4 cup pickling salt


  1. Wash cucumbers, remove tough ends
  2. Cut into small slices
  3. Place into 3-4 clean canning jars
  4. Bring water, vinegars, sugar and pickling salt to a boil
  5. Boil for 1 minute
  6. Pour over pickles in jars
  7. Seal tightly
  8. Allow to cool and then refrigerate
