sauteed mushrooms

When we get mushrooms in our weekly Produce Farmers Direct box, I love to saute them in different ways and use them for all meals!

Sauteed Mushroom Recipe


  • 6-8 large white mushrooms, washed, stems removed and chopped into quarters
  • 10-12 smaller portobello mushrooms, washed, stems removed, chopped into halves or quarters
  • 3-4 Tbs olive oil
  • 3-4 Tbs unsalted butter
  • 1 tsp minced fresh garlic
  • 1/4 cup white wine
  • 1/4-1/2 cup chicken broth
  • 2 Tbs fresh snipped parsley


  1. Place olive oil and butter in medium size pan
  2. Heat over medium high heat
  3. Add mushrooms and garliv, cook until just tender, stirring frequently
  4. Add white wine and garlic, lower heat
  5. Reduce the sauce until it's slightly thickened
  6. Pour into serving bowl, place snipped parsley on top
  7. Serve immediately
